Pretty coolThe best plugin of checkout managment. I loved the conditional fields and how easy was to setting them up. I only wish it could be cheaper but sometimes you can't have it all ;)

Can I set up fields based on the products that are added to the cart?

Yes, you can show fields by conditional logic as described in this section of the documentation.

Will the details of the fields added to the checkout page show in the order details?

Yes, they will show both in the order details and in the email.

Can the fields added to the "Additional Fields" section be editable in the My Account view of the user profile?

The fields added to Additional Fields are linked only to the order and can be edited only by the admin in the order edit section. On the contrary, customers can edit all the fields added to Billing and Shipping sections since they are available in My Account page.

Can I customize the date format?

Yes, it is possible to change the date format from the plugin options in YITH > Checkout Manager > Settings.

Can I change the position of the fields?

Yes, you can do it by simply moving them with drag and drop.

Can I edit the default fields of WooCommerce?

Sure, you can do it by clicking on the edit button that you can find in every field. You can not, however, delete any default field.
