However, the coupon is linked to the customer's email so no one can use it unless their email address has been added to that coupon.

no, unfortunately, it cannot be and we decided for that for that following reasons:
1- it can often happen that this could cause conflicts with the theme and so it might not work
2- customers should also include the year of birth, and it's not easy to pick the year with a date-picker format because they would have to go back in years starting from the current date, and this would take ages.
So, we decided not to add the date-picker.
